Creamy Mustard Free Range Chicken Breasts 1

Ingredients

    • 500g Lilydale free range chicken breast fillets
    • 2 teaspoons olive oil
    • 3 teaspoons wholegrain or Dijon-style mustard
    • ½ cup cream

    To Serve

    • chat potatoes
    • green salad

Method

1 Preheat oven to 180'C.
2 Heat oil in a heavy based frypan over a medium heat. Add chicken breasts and cook 3 minutes each side. Transfer chicken to a roasting pan and roast 20 minutes or until cooked through. Cover chicken and let stand 10 minutes.
3 Meanwhile, add mustard and cream to the frypan. Stir over a medium heat until thickened. Add any chicken juices from roasting pan to sauce. If sauce becomes too thick, add a blend of half water and cream.
4 Slice chicken and serve with sauce, chat potatoes and green salad.
