Lilydale Chilli Chicken Stir Fry 0 4 5 min 20 min Rating:

Ingredients

  • 1 tray Lilydale Chicken Stir Fry
  • 1 tablespoon canola oil 
  • 1 teaspoon sesame oil
  • 1/2 cup cliced shallots
  • 400g stir fry fresh vegetable mix
  • 1 tablespoon grated ginger
  • 190g jar sweet chilli jam*
  • 1/3 cup unsalted roasted cashews (optional)
  • 1 cup tightly packed basil leaves 

Method

1 Combine oils. Heat wok over a high heat until very hot, add 2 teaspoons of the oil and swirl to coat. Add half the chicken and stir fry for 3 minutes or until lightly brown. Transfer to a plate. Repeat with remaining chicken.
2 Add remaining oil to wok and swirl to coat, add shallots, vegetable mix and ginger, stir fry for 2 minutes. Add chilli jam and chashews and stir to combine. Return chicken and any chicken juices to pan and stir fry for 1 minute. Stir in basil.
