Lilydale Chinese Cabbage, Snow Pea and Cashew Stir Fry 1

Ingredients

  • 550g-650g Lilydale Chicken Breast Stir Fry 
  • 6 teapoons canola oil
  • 1 medium carrot thinly sliced
  • 1/2 cup sliced shallots, plus extra garnish
  • 250g snow peas, trimmed and halved diagonally
  • 5 cups shredded cabbage
  • 1/2 cup unsalted roasted cashews
  • 1/2 cup sweet chilli, ginger and soy sauce

Method

1 Heat wok over a hig heat until very hot. Add 2 teaspoons of oil and swirl to coat. Add half the chicken, stir fry for 3 minutes or until cooked through. Transfer to a plate. Repeat with remaining chicken
2 Add remaining oil to wok and swirl to coat. Add carrot and stir fry 1 mintue, then add shallots, snow peas and cabbage, stir fry for 1-2 minutes or until tender. Add cashews and sweet chilli, ginger and soy sauce. Stir to combine. Return chicken and and chicken juices to pan. Stir fry just until heated through. Serve with rice and garnish withsliced shallots.
